Baking with Dorie: Ricotta-Berry Muffins

Tanya, I can understand your reluctance to waste 6 precious egg yolks, but there's no reason you can't make good use of them. Think about making ice cream, pastry cream, creme brulee, pots de creme or lemon curd. I hope you'll decided to make the Almond-Currant Tea Cakes because they're awfully good.

Dear Dorie,
I just saw your recipie for Almond-Currant Tea Cakes in AARP magazine. I would like to make them but I am uncomfortable with idea of throwing away 6 egg yolks.
Checking my baking recepie file was not helpful.
I do not entertain at breakfast time, so making large omelets or frittatas is not an option.
I would appreciate any baking suggestions to use these 6 yolks.
