Baking with Dorie: Attention Swedish Visiting Cake Lovers
I think those of you who love the Swedish Visiting Cake in Baking From My Home to Yours, are going to be as excited as I was to make its cousin, the Swedish Apple Cake, from a recipe that my Connecticut neighbor, Ann Brettingen, recently got from her mother in Sweden. It's as easy as the Swedish Visiting Cake - as delicious, too - but it's got a little something extra: a baked-in apple topping.

Ok, I'm going to start with Candice, who poses the question about keeping your size (or my keeping my size) while baking daily. Actually, Mmm's comment kind of goes to that too. Yes, Candice, I did think it was a rhetorical question :), but now that I know, here's the best answer I can provide:
Some of you may have heard me say this before, but I practice what I call "bake and release". I bake -- yes, just about every day (and sometimes, like now, more than once a day)-- I taste and then off it goes. Out the door. To the elevator men in New York City. To my neighbors in Connecticut. To the guys at the wine shop down the street in Paris. It's the only way I can maintain a bit of control because I, like most of us who love to bake, also love to eat what I and others bake. It's a constant struggle, but it's also fun -- nothing makes people happier than being the recipient of something delicious and homemade.
Caitlyn and Judy -- by now I hope you've made the apple cake, and of course, I hope you loved it.

HOW on earth can you remain so perfectly slim while baking every day? During Baklava season, my pants are exploding!!!
Honestly, I had been considering giving up baking before I saw your silhouette!!!

Now that's *my* kind o' cake! Alas, a potential problem for those (of us) of the waist-expanding persuasion is how quickly and easily something this delicious can be made -- and made to disappear. This simple confection and its Swedish Visiting Cake cousin are high on my list of all-time favorites. I'm going to go and bake (another) one for my mother tomorrow.

The Swedish Visiting Cakes is one of my favorites, so I will also give the Swedish Apple Cake a try. Now that my culinary semester is nearly over, I can return to baking more than bread (I have some espresso malted milk balls waiting for me!) Thanks for such great recipes.
